Sagarmut: A tribute to the essence of the apple and its roots in the Basque Country. Made in collaboration with Taba Project with late-harvest apple juice, which we then ferment to create a unique base. We explore the versatility of the apple tree using its leaves, which we wither, oxidize and dry like in teas, and its toasted bark, together with plants collected in the Basque territory such as artemisia, tansy and yarrow. We add fig leaves from our cellar in Astigarraga to this bouquet. Finally, we macerate with Sagar Eztia and fortify with Sagardoz aromatic cider distillate, creating an aperitif that embodies the identity and legacy of the Basque apple.
